Viticulture Enology Science and Technology Alliance (VESTA) and South Dakota State University are hosting a Wine Sensory Analysis Workshop in cooperation with the SD Specialty Producers Association and University of Minnesota, May 15-16 at Mitchell Technical Institute, Mitchell, SD.
Wed., May 15, from 8:00 a.m. -5:00 p.m. will feature white wines, and Thurs., May 16, from 8:00 a.m. -5:00 p.m. will feature red wines.
This workshop will benefit winemakers, cellar workers, winery staff, and wine enthusiasts who seek a deeper understanding of these topics and their impact on a winery’s success. Workshop attendees will be guided through sensory test methods to access perceived differences and preferences in wine.
Topics include:
- Welcome and Introduction to Tasting
- White Sensory Standards
- Red Sensory Standards
- Descriptive Wine Analysis of White Wines
- Descriptive Analysis of Red Wines
- Evaluating Palate Attributes: Alcohol, Acid, and Tannin Wine Defects
- Wine Competition Methodology and Professional Wine Rating Systems
Day 1 White Wines costs $150/person and Day 2 Red Wines costs $150/person ($175/person each day after April 1, 2019) or register for both days for $275/person ($300 per person after April 1, 2019). There is also an additional discount of $25/day for multiple participants signed up from the same winery or vineyard. (No charge to VESTA students currently enrolled in VIN 266 – Sensory Evaluation of Wines)
