Seared Grass-fed Beef Tenderloin

Chef Scott Brinker-Seared Grass-fed Beef Tenderloin
Ingredients:
- Grass-fed Beef Tenderloin (3-4 lbs)
- 2 T Coarse Pepper
- 3 T Sea Salt
- 2 T Olive Oil
- 4 Cloves Minced Garlic
- 2 T Chopped fresh Thyme
- 2 T Fresh Parsley
- 1 T Dijon Mustard
- Splash of Red Wine
- 2 tsp Lime Juice
Directions:
- Rub ingredients on meat, covering well
- Sear all sides on outdoor grill if possible or a very hot pan for, about 2 minutes each side, until the outside is browned.
- Cook until heated through in a 400 degree oven
