Producer Feature: Dakota Mushroom & Microgreens
Dan Rislov of Dakota Mushrooms and Microgreens hosted a SDSPA tour on Sept. 8, 2018.
This operation is not your typically farm setting. All production is housed in a warehouse in southern Sioux Falls where the mushrooms are grown in humidity and temperature controlled rooms and the microgreens are grown in flats on shelves under grow lights.
The business launched in 2015, and the crops grow without the use of herbicides or pesticides.
They produce King Trumpet, Lion’s Mane and Oyster Mushrooms and Microgreen pea shoots, sunflower and radish.
Dan showed the mixing process of the growing media and how he uses a large canner to sterilize the medium once it is in plastic bags. In the first room the plastic bags are colonize for approximately 3-4 weeks during the spawn run phase. Then they are taken to a fruiting room with higher humidity to grow to maturity.
Dakota Mushrooms & Microgreens sell their products at the Falls Park Farmers Market in Sioux Falls. They also sell to area grocery stores and restaurants.
