Spaghetti Squash Salad

Salad Ingredients:

1 large chopped onion

1/2 cup each red and green pepper

1 cup chopped celery

3 1/2 cups cooked and shredded spaghetti squash

 

Salad Directions:

Cut squash in half. 

Microwave 10 minutes. 

Leave in microwave for 3 minutes. 

Scrape out seeds. 

Shread squash with a fork.

Add dressing, mix, and refrigerate at least 24 hours. 

This salad can also be frozen.

Dressing Ingredients:

1 cup sugar

1/4 cup white vinegar

1 teaspoon salt

2 tablespoons oil

Mix thoroughly
